Bean Pot White Chili

1 Large Onion
3 Large Cloves, Minced
2 Tbls Olive Oil
2 Small Jalapeno Pepper, Minced
4 Oz Can Chopped Green Chilies, Drained
2 Tsp Cumin
1 Tsp Oregano
1/4 Tsp of Less Cayenne Pepper
1/2 Tsp Salt
4 Cups of Chicken Broth
2 (15oz) Can of White Kidney Beans
4 Cooked Chicken Breasts Cut Into Bite Size Pieces
1/4 to 1/2 Cup Chopped Fresh Cilantro
1/2 to 1 Cup Shredded Monterey Jack Cheese

Saute onion and garlic in olive oil until tender. Add Jalapeno, chilies, cumin, oregano, cayenne pepper, and salt, and saute another minute. Stir in chicken broth, beans and chicken. Bring to a Boil. Then pour into Bean Pot and Cover and Simmer in oven for 25 minutes @ 300′. Stir in Cilantro and Cheese and Serve!
