Bean Pot Fruit & Oatmeal Casserole

1/2 cup brown sugar
2 cups half & half
2 Tablespoons butter
1/2 teaspoon salt

Combine the above 4 ingredients in a saucepan over medium heat.
Simmer until the butter is melted and the mixture is smooth. Remove from heat.

Add:
2 teaspoons cinnamon
1 cup quick cooking oats
2 cups peeled & chopped apples
1/2 cup chopped dried apricots
1/2 cup chopped pecans
1/2 cup raisins
2 tablespoons chopped dried cherries

Mix well. Add to your Bean Pot.
If the mixture seems dry – moisten with some additional half & half.

Top with:
Cinnamon Oat Nut Topping:
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 cup chopped pecans
1/4 – 1/2 cup quick oats

Mix well and sprinkle over the fruit mixture. Dot with butter.
Bake uncovered in a preheated oven @ 350 for 20-30 minutes.
Serve warm, great with vanilla ice cream for a dessert option!
