Bean Pot Beef Stroganoff
1 sm. onion, chopped
1 clove garlic, minced (or equal amount of garlic powder)
1 can cream of mushroom soup, undiluted
2 tsp. Worcestershire sauce
1/2 of 4 oz. can sliced mushrooms, drained
8 oz. sour cream
Bean Pot Porcupine Meatballs
2 eggs
3/4 cup instant rice
1/4 cup onion
Mix together and form into balls. Place balls in bean pot.
Mix following ingredients in separate bowl:
15 oz tomato sauce
1 cup catsup
1 cup water
1 tsp onion powder
1 tsp garlic salt
dash of pepper
Pour sauce over meatballs. Place lid on bean pot and microwave for 20 minutes. Great served with corn on the cob!
Bean Pot Strawberry Rhubarb Dessert
2 cups fresh or frozen strawberries
1 box yellow cake mix
1 stick of margarine or butter
2 Tbsp flour
2 Tbsp sugar
Mix rhubarb, strawberries, flour and sugar in the bottom of bean pot.
Pour cake mix over top and smooth until flat. Cut margarine into pieces and put on top of cake mix.
Put lid on bean pot and microwave for 7 minutes.
Stir up the top of the cake and butter so that there is no more dry cake mix. Place in microwave without lid for 5-7 more minutes.
Serve warm with ice cream or cool whip. Or you can serve for breakfast or brunch!
Bean Pot Chili Mac
1 pound – ground beef, cooked and drained
2 – 16 oz. cans hot chili beans, Do Not Drain
2 – large green peppers, chopped
1 – large onion, chopped
4 – celery ribs, chopped
1 – 8 oz. tomato sauce
1 – envelope chili seasoning
2 – garlic cloves, minced
1 – 7 oz. package elbow macaroni, cooked and drained
In a Celebrating Home Bean Pot combine the first eight ingredients. Cover and cook at 350 for 35 – 45 min or until heated through. Stir in macaroni. Season with salt and pepper to taste.
Bean Pot Old-Fashioned Baked Beans
- 1 lb dried navy beans
- 1/2 cup chopped onion, plus
- 1 small onion, whole, peeled
- 1/2 cup molasses
- 1 teaspoon dry mustard
- 1/4 cup brown sugar, packed
- 1/2 cup maple syrup
- 1 tablespoon ketchup
- 2 teaspoons prepared yellow mustard
- 1/2 cup orange juice
- 1 teaspoon salt
- 1/4 lb salt pork, slices

Rinse beans and pick them over. Put beans in a large plastic container with three times as much water as beans. Cover and refrigerate overnight.

Drain beans. Combine beans and chopped onion in a large saucepan. Add water to cover them and heat to boiling. Cover and let simmer about 30 minutes. Drain liquid into a small bowl to reserve for sauce and for cooking.

Measure 1/2 cup of the bean liquid into a bowl. Add the orange juice, molasses, maple syrup, ketchup, and prepared mustard. Then add the brown sugar, stirring to dissolve. Lastly, add the dry mustard and salt and combine.

In a bean pot layer half the salt pork and all of the beans, making sure to bury the peeled, whole onion in the bottom. Pour the sauce mixture over beans and add just enough reserved bean liquid to cover them. Top with remaining salt pork.

Bake, covered, at 300 degrees for 4 hours, checking on the hour. If beans seem too dry, add a little of the remaining bean liquid. Uncover and then bake for one hour more.
Bean Pot Taco Casserole
1 14’/2 oz. can RoTel® Tomatoes
1 10 3/4 oz. can Cream of Onion Soup
1 envelope Taco Seasoning Mix
1/2 cup Water
6 Corn tortillas cut into 1/2″ strips
1 cup Cheddar Cheese shredded
3 Tbsp. Green Onions sliced
1/2 cup Sour Cream
Brown beef in skillet or in your Bean Pot; drain.
Mix beef, tomatoes, soup, seasoning mix and water in Bean Pot.
Gently stir in tortilla strips.
Cover and bake at 325 degrees for 2 hours.
Sprinkle cheese over top; cover and let stand 5 minutes until cheese melts.
Sprinkle with onions; serve with sour cream.
Bean Pot Chicken and Dumplings
2 Pounds Chicken, Cooked and Shredded
3 1/2 Cups Chicken Broth
1 Can Cream of Chicken Soup
2 Tablespoons Stick Butter
6 Carrots, Chopped
2 1/4 cups Bisquick Dry Mix
2/3-3/4 Cup Milk
Add chicken, broth, cream of chicken soup, butter and carrots to Bean Pot.
Cook for 1 hour on 375.
In a bowl, mix bisquick mix and milk.
Using a spoon, drop spoon size biscuits into the Bean Pot on top of the chicken mixture.
Cook for 25 minutes on 325.
Biscuits will be done when they bounce back to the touch.
