Bean Pot Mexican Style Chicken
4 -6 Chicken Breasts – boneless, skinless
1 can Green Chili Enchilada sauce
1 can Rotel Tomatoes – Mexican style with lime & cilantro
2 Envelopes Sazo n Goya Seasoning – found in international section
Place chicken in bottom of bean pot. Mix together remaining ingredients and pour over chicken.
Cook at 250 degrees for 4-5 hours. Remove chicken from pot and fork shred on cutting board. Transfer chicken back into pot and stir to mix with juices. Serve with black beans, Spanish rice and warm tortillas. This chicken makes great shredded chicken burritos.
Bean Pot Super Easy Fajitas
–2 lbs of thin cut stir fry beef (you could use chicken)
–1 or 2 packets of fajita seasoning mix by McCormick
–1 onion
–2 bell peppers (I used 1 orange, 1 yellow)
–1/2 cup of water
The Directions.
Dump your meat into the Bean Pot. It can be frozen or thawed. Cut the onion and the peppers in strips, and add to the crock. Add the seasoning and water. Cover and cook on 250 degrees for 8-9 hours, or 350 degrees for 6. The meat is done when it reaches desired tenderness. We really like squeezing some fresh lime over the top of the meat before doctoring it up.
Bean Pot Strawberry Cheesecake Salad
12 oz. whipped topping
1 small package of cheesecake pudding (powder)
3 (6 oz) strawberry yogurts
1 lb fresh strawberries, sliced
3 bananas, sliced (add just before serving or they brown)
miniature marshmallows (add just before serving)
Thaw whipped topping and in a large salad bowl stir together whipped topping, yogurts, and pudding powder. Let this set up in the fridge for at least an hour before serving. Wash and slice strawberries. You can add strawberries to salad or wait to add them with sliced bananas and marshmallows just before serving. Keep refrigerated in Bean Pot.
Bean Pot Orange Chicken
• 3-4 boneless chicken breasts, chopped into small chunks
• 1/3 cup flour
• olive oil
• 1/2 T salt
• 1 teaspoon balsamic vinegar
• 3 T ketchup
• 6 oz. frozen orange juice concentrate (thaw or throw it in the microwave for 45 seconds)
• 4 T brown sugar
In a bowl, mix the orange juice, brown sugar, vinegar, salt, and ketchup. Pour the flour in a small bowl. Cover the chicken breast chunks in flour and shake off the excess. Pour a small amount of olive oil in a skillet and brown the flour-covered chicken. The chicken doesn’t need to be fully cooked since it’s going in the Bean Pot. After the chicken is done cooking, pour the pieces into the Bean Pot. Then cover the chicken with your sauce mixture and give the Bean Pot a stir. Cook in 350 oven for 45-50 minutes, or approx. 18 Minutes in Microwave
Bean Pot Strawberry Pudding Cake
Ingredients:
One Strawberry Cake Mix (the kind with the pudding in the mix)
“On the box” ingredients (substitute crushed strawberries for water)
One can of Cream Cheese Frosting
Directions:
Mix cake as directed on box in your Bean Pot. Then, spoon the frosting on top! Cover, and cook for 13 minutes in the microwave. Let set for a few minutes. DO NOT tip out onto a plate! Just scoop all the way to the
bottom, and serve. Spoon additional sauce from the bottom over the top.
Bean Pot Strawberry Coffee Cake
1 C. AP Flour
1/2 C. Sugar
2 tsp. Baking Powder
1/2 tsp. Salt
1/2 C. Milk
1 Egg
2 tbsp Melted Butter
1 1/2 C. Sliced Strawberries.
For Topping:
1/2 C. AP Flour
1/2 C. Sugar
1/4 C. Cold Butter Sliced.
Directions: Mix flour, sugar, baking powder & salt. Add milk, egg & melted butter- beat for about 2 minutes. Pour batter into lightly sprayed Bean Pot. Top batter with sliced strawberries. In a separate bowl: combine sugar & flour. Cut cold butter into mixture until mixture resembles crumbs. Sprinkle crumbs over the strawberries in Bean Pot. Bake in a 375 pre-heated oven for 30-35 minutes w/the lid off. (Oven time and temp may vary.) Serves 8.
Bean Pot Apple Berry Crumble
4-5 apples peeled and sliced
1 1/2 cups frozen berries
1 cup flour
1 cup oatmeal
1 cup sugar
1 tsp cinnamon
1 stick butter
Put sliced apples on bottom of Bean Pot. Pour berries over top. In another bowl, mix flour, oatmeal, sugar and cinnamon. Cut in butter until crumbly. Sprinkle on top of berries and place lid on Bean Pot. Microwave for 12-15 minutes
Bean Pot Lemonade Cake
1 lemon cake prepared according to package
Mix up in the Bean Pot and covered and microwave for 8 mins.
1/2 can of pink lemonade concentrate mixed with 1 cup of powdered sugar.
Pour this over the cake while poking holes in the cake.
Microwave again for 4 more mins uncovered!
This cake is great with cool whip or ice cream!
